Noi is the Hong Kong restaurant of Paulo Airaudo, the Argentine-Italian chef behind Amelia in San Sebastián, and it sits on the fifth floor of Four Seasons Hotel Hong Kong in Central. The kitchen is run day to day by head chef Luigi Troiano, and the restaurant holds two stars in the 2026 Michelin Guide Hong Kong.
Dining is by tasting menu only. The Signature Seasonal Menu runs to more than ten courses and changes every two to three months, with a strong seafood focus and much of the fish flown in from Japan. The cooking is rooted in Italian tradition but plated in a modern way; the Michelin inspectors single out a silky egg custard with Ibérico ham consommé. A shorter menu is offered at dinner and a set lunch on Mondays, and the wine pairings are well regarded.
The space is split between an Italian-style dining room around an open kitchen and a relaxed lounge with a wine bar and harbour views, where the meal can begin and end. It is a special-occasion address: book ahead online, and note that a 10% service charge is added.
