
Perched on the cliffs of Uluwatu inside Bvlgari Resort Bali, this small dining room carries the philosophy of Niko Romito, the three-Michelin-starred chef behind Reale in Abruzzo. The idea is to take Italian classics and strip them back to their purest form, using local Balinese ingredients where they shine.
Chef de cuisine Francesca Stabile runs the kitchen. Look out for the poached egg with asparagus and caviar, the cannellone with ragu, crisp suckling pig and a textbook tiramisu. An aperitivo before dinner, with the ocean below, sets the tone.
This is one for anniversaries and special occasions: dress is resort smart casual and children aged five and under are not admitted to the dining room.
