Cugini, meaning 'cousins', first opened in 2009 and is now on Joo Chiat Place. The room has white-washed brick, blue accents and a long bar. Executive chef Mauro Muroni and general manager Gerri Sottile run a menu built on handmade food from traditional recipes, with most of the cooking leaning south.
Order the handmade ravioli: ricotta and herbs, truffle and potato, lamb with butter and sage, or roast Iberico pork and veal. The spaghetto with bottarga and prawns and the squid-ink fettuccina are good seafood choices, and the carbonara and amatriciana are made with house-cured guanciale. Pizzas come from a wood-fired oven, and the 26-hour roast suckling pig is the main course to share. Finish with tiramisu or pistachio semifreddo.
It suits families, groups and relaxed dinners in the east. It is open daily for lunch and dinner, with last orders at 9:30pm. Pork features widely, including suckling pig and cured guanciale.
