
Fiamma, meaning flame, is the Italian restaurant at Capella Singapore on Sentosa, created with Mauro Colagreco of Mirazur fame. The space is styled like a rustic farmhouse with cosy nooks, a living-room lounge and a private dining room, and the wood-fired ovens set the tone for the menu.
Look out for handmade tagliatelle with mixed seafood, gnocchi with foie gras and mushrooms, wood-fired wagyu fillet alla Rossini and a silky saffron panna cotta. Wood-fired pizzas feature too, with a weekly pizza night, and the Sunday champagne brunch with antipasti, oysters and grilled lobster is a local favourite.
It suits celebrations, long family lunches and anyone combining a Sentosa staycation with a proper Italian feast. Aperitivo hour runs through the afternoon between lunch and dinner.
