LAVO is the Singapore branch of Tao Group's New York and Las Vegas brand. It is on level 57 of Marina Bay Sands Hotel Tower 1, next to the SkyPark, with a terrace bar overlooking the bay. Chief culinary officer Ralph Scamardella oversees a menu of Italian-American dishes alongside lighter coastal Italian plates.
Most tables order The Meatball: 500g of wagyu, veal and Italian sausage in marinara with whipped ricotta. Other picks are the bucatini carbonara, penne alla vodka, seafood fra diavolo, chicken parmigiana and brick-oven pizzas. The 20-layer chocolate cake feeds three to four people.
Come for the views, birthdays and nights that carry on at the bar. There is a weekday set lunch and a weekend DJ brunch, and the kitchen stays open late on Fridays and Saturdays. Expect a S$30 nett minimum spend per guest and a smart-casual dress code.
