
MONTI sits in the domed glass 1-Pavilion at Collyer Quay, on the water across from Marina Bay Sands, and turns ten in 2026. It has a dining room, a cocktail lounge and a rooftop used for weddings. The kitchen is run by chef de cuisine Andrea Chetta and keeps to classic Italian ingredients, with pasta made by hand.
Order the caciucco, MONTI's version of the Tuscan seafood stew, the squid-ink tagliolini, or agnolotti del plin. Other good picks are the burratina with heirloom tomato panzanella and the octopus cooked in the Josper grill. Groups can share a Mayura full-blood wagyu T-bone of 1.1kg. There is a homemade pumpkin gnocchi for vegetarians.
Book for an anniversary or a proposal, or for a weekday business lunch with the set menu. Weekend brunch runs under the Dolce Vita name. Lunch is 11am-3pm and dinner 6pm-11.30pm, every day. Cocktails and house pours are 30% off from 5.30pm to 7pm.
