Sospiri sits on the seventh floor of IOI Central Boulevard Towers and is run by Beppe De Vito's ilLido Group, the people behind the now-closed Braci. The name refers to a Puglian pastry De Vito ate as a child, and the kitchen, led by Matteo Ponti, cooks the food of Italy's south: Puglia, Campania, Calabria and Sicily. The dining room is styled like a Roman holiday house, with a terrace bar that looks across to Marina Bay Sands.
Start with capocollo from Martina Franca, burrata from Andria or bluefin tuna tartare with Pantelleria capers. The homemade pastas are the core of the menu: tagliolini with scampi and bottarga, truffled chitarra cacio e pepe, and fettuccine with 'nduja. Whole roasted turbot and the Amalfi lemon soufflé are good choices for sharing.
It works for client lunches and group dinners, with a weekday set lunch, weekend brunch and a private room for 14. The rooftop bar stays open until midnight Monday to Saturday and serves an all-Italian wine list.
