
Publico takes up the ground floor and garden of InterContinental Singapore Robertson Quay, facing the river on Nanson Road. It runs from lunch through to late evening, with an indoor dining room, a busy bar and a large garden where dogs are welcome. Pizzas and breads come out of wood-fired ovens, and pasta is made by hand.
Start with burrata and a pizza to share, then move on to the pasta, where crab ravioli and other fresh shapes rotate with the seasons. The whole Mediterranean sea bream grilled over fire is the pick of the mains. The kitchen also runs regular guest events, such as a week of hand-shaped orecchiette from a Bari pasta maker, and an aperitivo hour on weekday evenings.
It suits long weekend lunches, groups and families who want space outdoors. The bar menu runs from 3pm, and after 9:30pm only bar food is served. Bookings go through SevenRooms, and the restaurant also takes WhatsApp enquiries.
