
Acqua e Farina was founded by Italian chefs Roberto Galbiati, from Milan, and Antonio Manetto, who grew up near Naples. Both have cooked in Singapore for decades, and the menu brings together dishes from both ends of Italy. The Keong Saik branch opened in 2024 in a bright room with yellow banquettes and wine shelving.
The montanara is the signature: a pizza fried, then baked, topped with house-made pork sausage and spicy salami. The pizza dough is made with two Italian flours and fermented for 36 hours. Pasta is made fresh. Try the cocoa tagliatelle with 'nduja and prawns, cannelloni filled with meat, linguine with seafood or the sea urchin risotto with bottarga.
Portions are large, there is no corkage charge, and the restaurant is set up for children, vegetarians and gluten-free diners. It is closed on Mondays. The original branch is at The Rail Mall on Upper Bukit Timah Road.
