
Tre Trattoria is the Italian restaurant at Banyan Tree Phuket in the Laguna resort area of Cherngtalay, near Bang Tao Beach. It sits in a Thai-style pavilion among the resort's DoublePool Villas, on the edge of a lagoon, and guests are taken there by golf cart. The dining room is small, so it feels more like a private dinner than a hotel restaurant.
Chef Herb Faust cooks classic Italian dishes with a tour of the regions in mind. Start with vitello tonnato, burrata with basil or arancini, then move on to pappardelle with lamb and rosemary ragù, ricotta gnocchi or veal osso buco with Parmigiano polenta and gremolata. Phuket seafood and Australian beef feature among the mains, and fresh truffle can be shaved over any dish.
Expect to spend roughly 2,000–5,000 baht a head. Dinner is served daily from 6.30pm to 10pm; dress is smart casual and booking ahead is recommended, especially for non-residents.
