Torno Subito is Massimo Bottura's first restaurant in Asia, set in a former British army barrack at COMO Dempsey. The name is colloquial Italian for 'I'll be right back', and the Paola Navone-designed room recalls the 1960s Adriatic Riviera, with checkerboard floors, bold primary colours and Campari-bottle lamps. Chef Mauro Palumbo, who trained under Bottura in Modena, runs the kitchen.
The cooking draws on Emilia-Romagna. Order the handmade tortellino in a cream of 36-month-aged Parmigiano Reggiano and the tagliatelle al ragù made with hand-chopped wagyu, both from Bottura's own repertoire. Stricchetti al ragù, the breaded Cotoletta '2000' and the stone-baked pizzas are good for sharing, and Tiramisubito is the dessert to finish on.
A fun choice for a birthday, a lively date or a group lunch in Dempsey; there is a tasting menu as well as à la carte and a weekday lunch special. Open Wednesday to Sunday for lunch (12pm-3pm) and dinner (5.30pm-10pm); closed Monday and Tuesday. Book through SevenRooms.
