
Waterfall sits on the ground floor of the Garden Wing at Shangri-La Singapore, looking out over the hotel's landscaped gardens. The menu was overhauled with more than 20 new dishes, leaning towards Southern Italy and Puglia in particular, with pasta made in-house each day.
Start with the focaccia and the bruschetta topped with stracciatella and Parma ham, then share a fritto misto of seafood. Orecchiette with braciole ragù is the most Puglian dish on the card, and the spaghetti alla chitarra with Boston lobster is the splurge. Pizza in pala comes as a long rectangle split into three toppings. For groups, the kilo-weight Fiorentina T-bone is carved at the table, and porchetta braised in beer is another sharing option.
